Basmati Rice Salad recipe

Basmati Rice SaladBasmati Rice Salad

2 cups basmati rice
4 persian-style cucumbers or 1 english cucumber
1 cup feta cheese or more, crumbled
Parsley
2 tablespoons chopped chive
1/4 cup chopped olives
Juice of 1 lemon
Juice of 1 orange
Olive oil
Salt, to taste

Cook the basmati rice according to How to cook the pefect basmati rice?
Let it cool completely. You can even prepare this a day in advance. Make sure you fluff the rice really well after they are cooked and still hot.
Dice the cucumbers. Chop the chive and parsley. Juice the lemon and orange. Add all the ingredients to the rice. Add olive oil and salt. Mix well. Taste it. If it needs more lemon juice, go ahead and add some more. Add the feta cheese at the end.

This recipe can easily be doubled for a large crowd. Even though I prefer that this salad is made with Basmati Rice, you can substitute another kind of rice and the results should be similar. However, for the most flavorful rice salad, Basmati Rice is the best choice.
