Fresh Spinach Quiche

fresh spinach pie
½ lb of fresh spinach
1 pâte brisée (short crust pastry) to make one single crust. This is the French version of classic pie or tart pastry.
5 eggs
5 oz heavy whipping cream
7 oz grated swiss or ementhal cheese
Salt
Pepper
Cumin
Nutmeg

Place the washed spinach in hot salted water with very little olive oil added to it. Let it boil for about 7 minutes. Drain well.
Whisk the eggs with the whipping cream and add all the spices.
Roll out the pie dough and place in a quiche or tart pan. Mix the spinach with the egg mixture and pour into the pan. Cover the top with the grated cheese.
Place in a preheated 325F oven for 35 minutes. Keep an eye on it while it is cooking.
