One Pot Meal - Fish with Rice

One Pot Meal – Fish with Rice
1 ½ lb to ¾ lb of your favorite white fish
1 Cup Basmati Rice (See note on How to Cook Basmati Rice)
1 Yellow or white onion, diced
3 Cloves garlic, minced
Red pepper flakes
Dried herbs mix for fish
1 Teaspoon dry coriander
1 Tablespoon tomato paste
1 Cup chicken stock
½ Cup water
Oil
Salt
Sauté the onions and garlic in some oil. Add the coriander, herbs and salt. Add the tomato paste then add the water and stock. Bring it to a boil then add the rice and the fish. Cover and cook for 10-12 minutes.
Note: You can certainly increase the quantity for this recipe. You may also add any kind of vegetables to the same pot when you are still sauteeing the onion and garlic.
