 Low Fat Banana Muffins
 

2 cups flour
1/3 cup sugar
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/4 cup vegetable or canola oil
1 egg
3 large ripe bananas

This recipe yields 12 muffins. It can easily be doubled.

Ideas for additional ingredients:
2/3 cup frozen blueberries
1/2 cup walnuts
1/4 cup raisins

Preheat overn to 375F. Line or grease the muffin pans.
Sift together the flour, baking powder, baking soda and salt. Set aside.

In a bowl, beat the bananas until well mashed. Add the sugar, oil, and egg and beat until well blended. Add the flour, baking powder, baking soda and salt. Beat on low until just blended. Do not overmix. Add the extra ingredients of your choice at this point and mix gently. Spoon the mixture into the prepared muffin cups and bake in a 375F oven for 20-25 minutes, until the top is well browned.
